Spaghetti with Cherry Tomato and Burrata Sauce

INGREDIENTS -


  • 500g cherry tomatoes, halved

  • 7-10 garlic cloves, minced

  • Fresh parsley, chopped

  • 1 ball burrata cheese

  • 1 pack spaghetti

  • Salt and pepper, to taste

  • Grated Parmesan cheese (optional)

METHOD -


  1. Prep Ingredients: Chop the garlic and parsley, and halve the cherry tomatoes.  

  2. Cook Tomatoes and Garlic: In a saucepan, heat 2 tbsp olive oil over medium heat. Add cherry tomatoes and minced garlic.

  3. Cook, stirring occasionally, for 5-7 minutes until the tomatoes release their juices and the garlic is toasted.

  4. Blend the Sauce: Transfer the roasted tomatoes and garlic to a blender. Add the burrata cheese and blend until smooth.

  5. Cook the Spaghetti: Boil the spaghetti in salted water until al dente. Reserve some pasta water for later use.

  6. Combine Sauce and Pasta: In the same saucepan, add the blended sauce.

  7. Add the cooked spaghetti and toss to coat, adding reserved pasta water as needed for the desired sauce consistency.

  8. Season and Serve: Stir in the chopped parsley. Season with salt and pepper. Serve with grated Parmesan cheese, if desired.
