Indulge in a tantalizing Samosa Platter featuring three delightful variations. Paneer Samosas boast a blend of spiced paneer, while Cheese Corn Samosas marry the sweetness of corn with gooey cheese. Classic Aloo Samosas offer a comforting mix of mashed potatoes and aromatic spices. All fried to golden perfection, these samosas are perfect for dipping in green chutney and ketchup, making it a diverse and irresistible platter for any occasion.

INGREDIENTS:


For Paneer Samosa:

1 tsp Oil

1 tsp Cumin Seeds

1 small Onion, finely chopped

2 Green Chillies, chopped

2 tbsp Capsicum, chopped

1 tsp Red Chilli Powder

1 tsp Coriander Powder

1/2 tsp Turmeric Powder

1/2 tsp Garam Masala

1/2 tsp Amchur (Dry Mango Powder)

1 tsp Salt

400g Paneer, cubed

Samosa Patti Strips

Cornflour Slurry (for sealing)

Oil (for frying)

Green Chutney and Ketchup (for serving)


For Cheese Corn Samosa:

2 cups Corn (blanched)

1 tsp Chaat Masala

1 tsp Amchur (Dry Mango Powder)

1 tsp Chilli Flakes

1 tsp Italian Mix Herbs

1 tsp Black Pepper Powder

1 cup Grated Cheese

1 tsp Green Chilli, chopped

1 tsp Coriander, chopped

1 tsp Salt

Samosa Patti Strips

Cornflour Slurry (for sealing)

Oil (for frying)

Green Chutney and Ketchup (for serving)


For Aloo Samosa:

6 Potatoes (boiled)

2 tsp Coriander

1 tsp Coriander Powder

1 tsp Red Chilli Powder

1 tsp Amchur Powder

1 tsp Garam Masala

1 & 1/2 tsp Salt

Green Peas

Green Chillies, chopped

Coriander Leaves, finely chopped






METHOD:


For Paneer Samosa:

1. Heat oil in a pan, add cumin seeds and chopped green chillies.

2. Add onions, capsicum, and cubed paneer. Mix well.

3. Add red chilli powder, turmeric powder, and garam masala.

4. Sprinkle amchur powder and salt, mix until well combined.

5. Fill samosa patti strips with the mixture, seal with cornflour slurry.

6. Fry until golden brown.

7. Serve hot with green chutney and ketchup.


For Cheese Corn Samosa:

1. Mix blanched corn with chaat masala, amchur, chilli flakes, herbs, black pepper, and grated cheese.

2. Add chopped green chilli and coriander.

3. Fill samosa patti strips, seal with cornflour slurry.

4. Fry until golden brown.

5. Serve hot with green chutney and ketchup.


For Aloo Samosa:

1. Mash boiled potatoes, add green peas.

2. Add coriander powder, red chilli powder, amchur powder, garam masala.

3. Mix in chopped green chillies and coriander leaves.

4. Add salt, mix until well combined.

5. Fill samosa patti strips, seal with cornflour slurry.

6. Fry until golden brown.

7. Serve hot with green chutney and ketchup.
