Kuttu Dosa

INGREDIENTS
2 cups Kuttu Flour
1.5 cups Water
Salt to taste
4 tbsp Peanuts
4 Green Chillies
7-8 Curry Leaves
1/4 cup Coriander
1 cup Grated Coconut
1/4 cup Water
Oil for cooking
METHOD
1. In a bowl, combine kuttu flour, salt, and water. Mix until smooth, ensuring no lumps remain. Cover the batter and let it rest for 10 minutes.
2. For the vrat wali chutney: In a blender jar, add peanuts, green chillies, curry leaves, coriander, grated coconut, salt, and water. Grind until smooth. Set the chutney aside.
3. To make the dosa, heat a non-stick pan. Pour the dosa batter onto the pan and spread it gently from the center outwards.
4. When the batter on top has cooked and the bottom is crisp and golden, sprinkle 1/4 to 1/2 teaspoon of oil on the edges and center of the dosa.
5. Use a spoon to spread the oil on the dosa.
6. Cook until the base is golden and crisp. It will easily detach from the pan, and the sides will become separated when fully cooked.
7. Fold the kuttu dosa and serve it immediately with the prepared chutney.
