Macaroni Pasta with Roasted Feta and Vegetables

If you’re in the mood for a comforting, flavor-packed meal, this Macaroni Pasta with Roasted Feta and Vegetables is your perfect go-to! The combination of tangy roasted feta, sweet caramelized vegetables, and al dente macaroni creates a creamy, savory dish that’s sure to satisfy. Whether it's a cozy weeknight dinner or a weekend indulgence, this pasta is simple to prepare yet delivers gourmet-level taste. Garnished with a touch of oregano and chili flakes, it’s a meal that’ll have you coming back for seconds!

Ingredients:

  • 200g macaroni pasta
  • 200g feta cheese block
  • 2 tomatoes, halved
  • 1 onion, quartered
  • 1 red bell pepper, sliced
  • 4 cloves garlic, whole
  • 1 tsp thyme
  • 3 tbsp olive oil
  • Salt and pepper, to taste
  • Pasta water (reserved from boiling the pasta)
  • Oregano and chili flakes, for garnish

Instructions:


Preheat Oven:

  1. Preheat your oven to 200°C (390°F).


Prepare Vegetables and Feta:

  1. Place halved tomatoes, quartered onions, sliced red bell pepper, and whole garlic cloves on a baking tray.
  2. Add the block of feta cheese to the center of the tray.
  3. Drizzle with olive oil and sprinkle with thyme, salt, and pepper.


Roast:

  1. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are soft and slightly charred, and the feta is golden.


Cook Pasta:

  1. While roasting, cook the macaroni pasta in salted boiling water according to package instructions until al dente.
  2. Reserve about 1 cup of pasta water before draining.


Blend Sauce:

  1. Once roasted, let the vegetables and feta cool slightly.
  2. Transfer them to a blender or food processor.
  3. Add some reserved pasta water to help blend the mixture into a smooth and creamy sauce. Adjust consistency with more pasta water if needed.


Combine Pasta and Sauce:

  1. Pour the blended sauce over the drained macaroni pasta.
  2. Toss to coat the pasta evenly with the sauce.


Garnish and Serve:

  1. Garnish with oregano and chili flakes.
  2. Serve warm and enjoy!
