Zucchini Fries

INGREDIENTS
For Yogurt Dip:
1 cup Yogurt
2 tbsp Garlic, finely chopped
2 tbsp Parsley, chopped
2 tbsp Coriander, chopped
Salt, to taste
For Zucchini Fries:
2 Zucchinis
2 cups Bread Crumbs
2 tbsp Parmesan Cheese
2 tbsp Garlic Powder
1 tbsp Chilli Flakes
1 tbsp Mixed Herbs
Salt, to taste
2 Eggs, whisked
METHOD
Yogurt Dip:
1. In a bowl, combine yogurt, finely chopped garlic, chopped parsley, chopped coriander, and salt to taste. Mix well and set aside.
Zucchini Fries:
1. Cut the zucchinis into long cylindrical slices and set aside.
2. In a separate bowl, mix bread crumbs, parmesan cheese, garlic powder, chilli flakes, mixed herbs, and salt to taste.
Dip each zucchini slice into the whisked eggs, ensuring they are evenly coated.
3. Transfer the egg-coated zucchini slices to the bread crumb mixture, coating them evenly from all sides. Then, preheat the air fryer to 180 degrees Celsius.
4. Place the coated zucchini fries in the air fryer basket and air fry at 180 degrees Celsius for 20 minutes or until they are crispy and golden brown.
5. Garnish the yogurt dip with a drizzle of chilli oil. Garnish the zucchini fries with chopped parsley.
6. Serve the zucchini fries alongside the flavoured yogurt dip.
