Whole Masala Roast Chicken

Whole roast chicken prepared with Indian spices made in a glass baking dish or on rotisserie.
Cooking chicken does not get easier than this. Marinate the chicken well with the bold spices to lift up its flavours and enjoy a hearty and healthy meal.

INGREDIENTS:


1 whole chicken, 1 kg approx


Marinade 1

2 tbsp chilli powder

2 tbsp chopped ginger

2 tbsp chopped garlic

2 green chillies, chopped

1 tsp jeera

1 tsp saunf 

1 tsp garam masala

1/2 cup curry leaves

2 tbsp coriander seeds

Salt to taste

1/4 tsp turmeric powder

1/4 cup oil


Marinade 2

1/4 cup finely chopped onions

1 tbsp finely chopped garlic

1/4 cup mix of 2 tbsp tamarind and 2 tbsp jaggery




METHOD:


Mix together the ingredients of marinade 1 in a large mixing bowl.


Pre-heat the OTG at 230°C  for 5 minutes.


Clean and wash the whole chicken. Make slits for the marinade to absorb better.


Rub marinade 1 in the slits evenly and keep aside to marinate for 20 minutes.


Rub marinade 2 on the chicken evenly and keep aside to marinate for another 10 minutes.


Arrange the chicken on a greased OTG baking dish/tray/grill and bake in a pre-heated oven at 210°C  for 35 - 40 minutes.


Serve hot.


#BorosilTip - For better results, insert the rotisserie rod into the chicken and use the rotisserie option to cook.
