Vegetable Noodle Broth

Packed with flavour and nutrients, this wholesome soup is what you'll turn to again and again when you need something light and easy.

INGREDIENTS:


1tsp ginger

1tsp green chilli

1/2 cup broccoli

1/2 cup cabbage

1/2 cup yellow capsicum

1/2 cup red capsicum

1/2 cup carrots

1/2 cup mushroom

1tsp oil

1tsp garlic

1tsp soy sauce

1tsp vinegar

Salt, to taste

1tsp pepper

500ml water

Boiled noodles 



METHOD:


In a kadhai, add ginger, garlic, green chilli, onions and sauté till the ingredients release their aroma.


Toss in your diced vegetables and give it a good stir. Cook for a couple of minutes and set aside. 


In another vessel, add oil, ginger and garlic. Sauté  till their flavour infuses with the oil. 


Add soy sauce, vinegar, pepper and salt.


Add water and bring it to a boil. Then, add the vegetables into the broth.


In a serving bowl, add noodles, vegetable broth and garnish with spring onions.
