Thai Peanut Dressing with Soba Noodle Salad
Salads don’t get simpler than this. If you are looking for a flavour change, this is a must try.
INGREDIENTS: Serves 2
For the dressing
4 tbsp peanut butter
2 cloves garlic
2 tbsp honey
2 tbsp brown sugar
1 tbsp soy sauce
2 tbsp chopped coriander
1 tbsp sweet basil
Juice of 1 lime
4 tbsp sesame or neutral oil
Rock salt, to taste
For the salad
1 cup Soba noodles, cooked, washed, drained and cooled
1 small carrot, cut into sticks
½ a red bell pepper, julienned
1 small English cucumber, half moons (seeds removed)
¼-½ cup dressing, to taste
#BorosilTip: This salad makes a wonderfully light lunch for weekdays. Just carry the dressing and the salad in separate borosilicate glass storage container and toss it together when you're ready to eat!
METHOD:
For the dressing
Place all the ingredients, except oil, in the Nutrifresh bullet jar. Process until smooth.
Add the oil and process again.
Taste and adjust seasoning.
For the salad
Toss together all the ingredients to mix well.
Sprinkle over toasted peanuts.
