INGREDIENTS -
For the Filling:
- 2 cups soaked sabudana (tapioca pearls)
- Salt (as needed)
- 1 tbsp oil
- 2 chopped red chillies
- 1 cup chopped carrots
- 1 cup chopped mushrooms
- A handful of coriander stems
- 2 tbsp red chilli sauce
- 1 tbsp dark soy sauce
- 1 tbsp vinegar
- ½ cup crushed peanuts
For Serving:
- Chilli oil
METHOD -
Prepare the Filling:
- Heat 1 tablespoon of oil in a pan and add the chopped red chillies. Sauté until they splutter.
- Add the chopped carrots and mushrooms, and sauté for a few minutes until slightly tender.
- Mix in the coriander stems, red chilli sauce, dark soy sauce, vinegar, and salt as needed.
- Finally, add the crushed peanuts and cook until the mixture turns sticky. Set aside to cool.
Prepare the Sabudana Dough:
- In a separate bowl, combine the soaked sabudana with a pinch of salt.
- Mash the mixture until it becomes sticky and holds together.
Assemble the Dimsum:
- Take a portion of the mashed sabudana and flatten it into a disc shape.
- Place a spoonful of the prepared vegetable filling in the center and cover it completely, sealing the edges to form a ball or dumpling shape.
Steam the Dimsum:
- Place the assembled dimsum in a steamer.
- Steam for 12-15 minutes until cooked through.
Serve hot with chilli oil on the side. Enjoy!
