Savour the fusion of nutty pistachios and fresh basil in a creamy pesto sauce, delicately coating perfectly al dente fusilli pasta. Topped with juicy cherry tomatoes and a sprinkle of parmesan, this dish offers a taste of Mediterranean indulgence, ideal for a cozy dinner at home or impressing guests with a gourmet touch.

INGREDIENTS:

For Basil Pesto Sauce:

  • 1/2 cup basil leaves
  • 6-7 garlic cloves
  • 3 tbsp freshly grated parmesan cheese
  • 1/4 cup soaked and peeled pistachios
  • 2 tbsp oil
  • Salt and pepper to taste

To Assemble:

  • 3 cups Boiled fusilli pasta
  • Handful cherry tomatoes
  • Parmesan cheese
  • Olive oil

METHOD:

  1. Make the Pistachio Pesto Sauce: Blend all sauce ingredients until smooth.

  2. Prepare the Pasta: Mix boiled pasta with prepared pistachio sauce in a bowl.
