Mysore Bonda

INGREDIENTS:
1 cup Maida
1/2 cup Rice flour
1/2 cup Curd
2 tbsp chopped Green Chillies
10-12 Curry leaves
1 tbsp chopped Ginger
2 tsp Cumin seeds
1 tsp Baking Soda
A pinch of Salt
2 tbsp chopped Coriander
Oil for frying
METHOD:
1. In a bowl, combine 1 cup of all-purpose flour, 1/2 cup of rice flour, 1/2 cup of curd, 2 tbsp of chopped green chillies, 10-12 curry leaves, 1 tbsp of chopped ginger, 2 tsp of cumin seeds, a pinch of salt, and water. Mix well until everything is combined.
2. Cover the bowl and let the batter rest for an hour; it will become soft and fluffy.
3. Wet your hands with water and shape small balls from the batter. Drop them carefully into a kadhai of hot oil for frying.
4. Fry the balls until they turn golden brown, then serve with red and green chutneys.
