Golden koftas stuffed with dry fruits and cranberries, drenched in a creamy, spiced gravy—Malai Kofta is pure decadence. Perfect for festive dinners or when you want to treat yourself, it’s a blend of rich textures and flavours.

Serve with naan, parathas, or rice for a royal dining experience. Feel the comfort in every bite!

INGREDIENTS -

For Kofta:


  • 3-4 medium-sized boiled potatoes

  • 200g paneer

  • 50g mawa

  • 2-3 chopped green chillies

  • Salt (as needed)

  • 3 tbsp cornflour

  • 1 boiled potato (grated)

  • ¼ cup chopped almonds

  • ¼ cup chopped cashews

  • ¼ cup sliced dried cranberries

  • ¼ cup chopped pistachios

  • 2 chopped green chillies

  • Handful of chopped coriander leaves



For Gravy:


  • 2 tbsp ghee

  • 1 cinnamon stick

  • 2 tsp black peppercorns

  • 3-4 dried Kashmiri red chillies

  • 1 tsp cloves

  • 4-5 green cardamoms

  • 3 medium-sized diced onions

  • 1 piece ginger

  • 8-10 garlic cloves

  • 5 medium-sized tomatoes

  • Handful of coriander stems

  • ¼ cup cashew nuts

  • Salt (as needed)

  • 1 cup water

  • 1 tbsp ghee

  • 2 tsp cumin seeds

  • 2 tsp red chilli powder

  • 1 tsp turmeric powder

  • 2 tsp garam masala

  • ½ tbsp honey

  • 2 tbsp fresh cream

Prepare the Kofta:


METHOD -


  1. In a bowl, mash the boiled potatoes, paneer, and mawa until smooth.

  2. Add chopped green chillies, salt, and cornflour. Mix well.

  3. In another bowl, combine grated boiled potato, chopped almonds, cashews, dried cranberries, pistachios, chopped green chillies, chopped coriander leaves, and salt. Mix well.

  4. Form small balls from the potato-paneer mixture, stuffing each ball with the dry fruit mixture.

  5. Dust the balls in cornflour and deep fry until golden brown.



Make the Gravy:


  1. In a pan, heat ghee. Add cinnamon stick, black peppercorns, dried Kashmiri red chillies, cloves, and green cardamoms. Let them splutter.

  2. Add diced onions, ginger, garlic, tomatoes, coriander stems, cashew nuts, salt, and water. Cook until the tomatoes are soft.

  3. Blend the mixture into a smooth puree.



Final Steps:


  1. In the same pan, heat ghee. Add cumin seeds, red chilli powder, and turmeric powder. Stir in the prepared gravy.

  2. Add garam masala, honey, and fresh cream. Mix well.

  3. Gently stir in the koftas.

  4. Garnish with fresh cream and chopped coriander leaves.
