Soft, golden, and irresistibly flaky, Luchi is a traditional Bengali favourite. Made from smooth maida dough and fried to perfection, these puffed beauties pair beautifully with aloo sabji or any spicy curry. Perfect for a cosy breakfast or festive indulgence, this dish will transport you straight to the heart of Bengal!

INGREDIENTS -

  • Maida: 2 cups

  • Ghee: 1 tbsp

  • Salt: to taste

  • Water: approx. 1 cup

  • Oil: for frying

METHOD -


  1. In a bowl, add maidaghee, and salt. Mix well.

  2. Gradually add water to form a smooth dough.

  3. Heat oil in a pan to fry the Luchi.

  4. Make lemon-sized balls from the dough and cover them with a moist cloth.

  5. Flatten each ball and roll it out from the centre until it reaches approximately 10 cm in diameter.

  6. Gently drop the rolled Luchi into the hot oil.

  7. Fry on both sides until the Luchi puffs up and turns golden brown.

  8. Remove from oil and drain excess oil on paper towels.


Serve your Luchi with aloo sabji for a delightful meal!
