Delight in a zesty lemon-infused cake adorned with bursts of juicy blueberries. This moist, tender treat blends the tangy brightness of lemon with the sweet allure of fresh blueberries, making it perfect for afternoon tea or a refreshing dessert after a summer picnic. Treat yourself to a slice of homemade goodness, beautifully dusted with icing sugar, and enjoy a taste of sunshine in every bite.

INGREDIENTS:

  • 1 seedless lemon
  • 2 cups all-purpose flour + 1 tbsp
  • 3 eggs
  • 1 cup caster sugar
  • 3 tsp baking powder
  • 1/3 cup olive/vegetable oil
  • 1/4 cup milk
  • 2 tsp vanilla extract (optional)
  • 1 cup fresh blueberries
  • Icing sugar for dusting
  • Oil for greasing

METHOD:

  1. Put all ingredients except blueberries in a blender and blend into a smooth batter.

  2. In a bowl, toss fresh blueberries with 1 tbsp flour to prevent sinking.

  3. Fold blueberries into the batter.

  4. Grease a baking mould, pour in the batter, and bake in a preheated oven at 180°C for 45 minutes or until a skewer comes out clean.

  5. Once baked, cool completely and dust with icing sugar.
