Note:

You can add the leftover almond meal to shakes, smoothies, overnight oats etc

INGREDIENTS: Serves 1

  • 1 cup almond milk
  • 3 tbsp chia seeds
  • 1-2 tbsp honey, to taste
  • Berries, to top

METHOD:

• In a lidded jar, shake together almond milk and chia seeds until well mixed. Repeat after

5-10 minutes so they don't clump.

• Pour it in a glass storage container and leave in fridge to set overnight (or for a couple of hours) until the seeds swell. You might need to add more seeds in case the pudding isn’t well set. Stir in some more and leave for an hour.

• The pudding should be set. Top with seasonal berries or frozen berries. Enjoy!
