INGREDIENTS -
- 1 onion, chopped
- 1 tomato, chopped
- 8 eggs
- 2 green chilies, chopped
- 1 tbsp red chili powder
- 1 tsp turmeric powder
- 1 tsp salt
- 1 tsp coriander powder
- 1 tsp black pepper powder
- Fresh coriander leaves for garnish
- 1 tbsp butter
- Water
METHOD -
Boil the Eggs: Start by boiling the eggs until they're hard-boiled. Once done, peel and set them aside.
Fry the Eggs: Cut the boiled eggs in half. Heat butter in a pan and lightly fry the egg halves on both sides until golden brown. Remove from the pan and set aside.
Prepare the Masala Base: In the same pan, heat some oil. Add the chopped onions, tomatoes, and green chilies. Sauté for a few minutes until the onions turn translucent.
Add Spices: Add 2 tbsp of water to the pan, followed by the red chili powder, turmeric powder, salt, coriander powder, and black pepper powder. Stir well and cook for a couple of minutes until the masala becomes fragrant.
Add Fried Eggs: Place the fried egg halves into the pan, and gently mix them into the masala. Cover the pan and let it cook for 5-7 minutes to allow the flavours to meld together.
Garnish: Once cooked, garnish with fresh coriander leaves.
