METHOD -
Prepare the Dough:
In a bowl, mix together the whole wheat flour, curd, oil, salt, and crushed ajwain seeds. Gradually add water to form a soft dough. Let it rest for 30 minutes.
Prepare the Filling:
In a separate bowl, mash the boiled potatoes. Add the chopped onions, coriander leaves, ginger, green chillies, red chilli powder, dry mango powder, crushed coriander seeds, and salt. Mix everything well.
Stuff the Kulchas:
Divide the dough into small balls. Roll them out, add the prepared filling in the center, and pinch the sides together to seal. Remove any excess dough.
Cook in Air Fryer:
Roll the stuffed dough to medium thickness. Place them in the air fryer and cook for 12 minutes at 180°C (356°F), or until golden brown.
Serve:
Serve the kulchas hot with Amritsari chole, sliced onions, and green chillies.
