Watermelon Feta Salad
INGREDIENTS:
6 cups cubed seedless watermelon, chilled (about 4 pounds or 1/2 medium watermelon)
6 ounces feta cheese, crumbled (about 170 g)
For the Dressing:
1/4 cup extra virgin olive oil
1 tablespoon freshly squeezed lime juice
1/2 teaspoon lime zest
1/2 teaspoon salt (or to taste)
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh mint leaves
METHOD:
In a small bowl, whisk together the olive oil, lime juice, lime zest, salt, black pepper, and chopped mint leaves until well combined.
Add the chilled watermelon cubes to a large bowl.
Pour the dressing over the watermelon and toss everything gently until the watermelon is evenly coated.
Transfer the salad to a serving plate or bowl.
Sprinkle the crumbled feta cheese over the top of the watermelon salad.
Serve the salad immediately and enjoy the delicious and refreshing flavours!
