Watermelon Feta Salad

Watermelon Feta Salad
This delightful and refreshing salad is perfect for any summer occasion. Featuring sweet and juicy cubes of chilled watermelon, paired with tangy and crumbly feta cheese, all brought together by a zesty and flavourful mint-lime dressing.

INGREDIENTS:


6 cups cubed seedless watermelon, chilled (about 4 pounds or 1/2 medium watermelon)

6 ounces feta cheese, crumbled (about 170 g)


For the Dressing:

1/4 cup extra virgin olive oil

1 tablespoon freshly squeezed lime juice

1/2 teaspoon lime zest

1/2 teaspoon salt (or to taste)

1/4 teaspoon freshly ground black pepper

1/4 cup chopped fresh mint leaves





METHOD:

In a small bowl, whisk together the olive oil, lime juice, lime zest, salt, black pepper, and chopped mint leaves until well combined.


Add the chilled watermelon cubes to a large bowl.


Pour the dressing over the watermelon and toss everything gently until the watermelon is evenly coated.


Transfer the salad to a serving plate or bowl.


Sprinkle the crumbled feta cheese over the top of the watermelon salad.


Serve the salad immediately and enjoy the delicious and refreshing flavours!
