Tandoori Marinade

This is a really quick and flavourful marinade to make for paneer tikka, and even for grilled vegetables like cauliflower. For a special twist, try giving the dish dhungaar/smoke!
INGREDIENTS:
- ½ cup Greek yogurt
- Juice of 1 lime
- 1 tbsp chickpea flour (besan)
- 3 large cloves of garlic,
- chopped/smashed
- ½” piece ginger, chopped
- 2 tsp roasted cumin powder
- (bhuna zeera powder)
- 1 tsp chaat masala
- 1 tsp Kashmiri red chili powder
- 1 tbsp vegetable oil
- 1 tbsp kasuri methi
#BorosilTip:This marinade works well with other vegetables, like cauliflower, broccoli or potatoes too! If you're prepping for a party, just double the quantity and use a mixer grinder with a larger jar. You can also prep a large batch and freeze it in airtight jars or containers
METHOD:
- Place garlic in small jar of blender and chop, then add 2 tbsp of yogurt and all remaining ingredients, except kasuri methi, and process briefly to mix.
- Whisk in remaining yogurt and kasuri methi. Taste and adjust seasoning.
- Pour over paneer cubes or vegetables and mix gently but well to coat.
- Allow to marinate for half an hour to overnight.
- Grill in oven or on tava turning until all the sides are done.
- Sprinkle over chaat masala and serve with a green chutney and lime wedges.
