Rice Paper Croissants

Indulge in a unique twist on a classic treat with these delightful Rice Paper Croissants! Perfect for a light, crispy snack or a quick breakfast option, these croissants are made using rice paper, giving them a gluten-free makeover. They’re easy to whip up, with just a few pantry staples like eggs, vanilla, and cinnamon, making them a wholesome yet satisfying choice. Whether you're looking to elevate your morning routine or enjoy a guilt-free afternoon pick-me-up, these Rice Paper Croissants are the perfect blend of simplicity and flavor. Plus, they’re baked to golden perfection, offering a healthier alternative to traditional buttery croissants.

Ingredients:

  • 4 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon powder
  • 6-8 sheets of rice paper
  • 2 tbsp sugar (for sprinkling)

Instructions:

  1. ⁠In a bowl, whisk together eggs, vanilla extract, and cinnamon powder.
  2. ⁠Dip 3 sheets of rice paper into the egg mixture until fully coated.
  3. ⁠Place soaked rice papers on a baking tray and cut them into triangles from the center.
  4. ⁠Take the remaining rice paper and place it at the base of each triangle (not at the tip).
  5. ⁠Fold each triangle into a croissant shape.
  6. ⁠Sprinkle sugar over the croissants and bake at 180°C (350°F) until crisp and golden brown.
  7. ⁠Allow to cool slightly before serving.
