Fattoush Salad
INGREDIENTS:
Dressing:
2tbsp Lemon juice
2tbsp Olive Oil
1tsp Pomegranate molasses
1tsp Honey
1tbsp Sumac
Salt
Pepper
Pita Crisps:
6pc Pita bread
1tbsp Oil
1tbsp Sumac
Salad:
2cups Romaine Lettuce
1cup Yellow and Red Bell Pepper
1cup Green Cucumber
1cup Cherry Tomatoes
1/2cup Pomegranate seeds
1/2cup Radish
1tbsp Parsley
1tbsp Mint
METHOD:
1. For the dressing, in a small bowl, add all the ingredients one by one and whisk it all together to emulsify and then keep aside for later.
2. To make the pita crisps, cut the round pita bread into small pieces, drizzle oil and sprinkle some sumac on it. Mix it all well and then toast it on a pan until crisp.
3. Now for the salad, in a big mixing bowl, add all the veggies in the bowl and toss it.
4. Serve it in a platter, garnish it with radishes, pita crisps and pour the dressing on top and enjoy!
