Cucumber & Onion Salad
INGREDIENTS:
2 long English cucumbers
½ sweet white onion
⅓ cup white vinegar or cider vinegar
2 tablespoons vegetable oil or light olive oil
2 tablespoons water
2 teaspoons sugar
2 tablespoons fresh dill, chopped
Salt and pepper, to taste
METHOD:
1. Wash the cucumbers and peel them if desired. Thinly slice the cucumbers and onions and place them in a large mixing bowl.
2. In a separate bowl, whisk together the vinegar, oil, water, and sugar until the sugar is dissolved.
3. Pour the dressing over the sliced cucumbers and onions, and toss to coat well. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to 4 hours, stirring or tossing a few times while marinating.
4. Before serving, remove the salad from the fridge and add the chopped dill, salt, and pepper. Toss gently to combine.
5. Serve the salad chilled, garnished with additional fresh dill if desired. Enjoy!
