Cold Tomato Soup

The perfect summer recipe for a deliciously cold Spanish soup.

A gazpacho is a cold soup of Spanish origin made with raw blended vegetables. You can make several versions. Cucumber, apples, sweet corn, avocado are some versions. Garnish with any crunchy vegetables such as finely chopped cucumber, celery, bell peppers etc. - and a generous drizzle of extra virgin olive oil! This soup is perfect for those hot summer days!

INGREDIENTS: Serves 2


5 medium ripe tomatoes, quartered 

½ an English cucumber, diced

¼ a red bell pepper, diced

2 cloves garlic

1 tbsp red wine vinegar

1 tsp Worcestershire sauce

1 tbsp extra virgin olive oil

Salt and pepper, to taste


Note :

You can add a dash of tobasco for a spicy kick!



METHOD:


• Place all the ingredients in the Nutrifresh blender jar and process until smooth.


• Chill in a Klip-N- Store glass storage container for a couple of hours for the flavours to mature.


• Serve garnished with small diced vegetables and a generous drizzle of extra virgin olive oil.
