Schezwan Noodles Ingredients 

Gather the following ingredients and fire up your wok or pan to create delicious noodles for 4 people. 

• 1 packet or 300 grams of noodles
• 1 tablespoon oil
• 2 large finely chopped garlic cloves
• 3 stalks of finely chopped green onions
• 1 medium-sized thin sliced red onion
• 1 medium-sized thin sliced green, yellow, and red bell peppers
• 2 medium thin sliced orange carrots
• 1.5 cups finely shredded Indian cabbage or Chinese cabbage
• 5 tablespoons Schezwan sauce
• Salt to taste

Ingredients to Prepare Schezwan Sauce at Home
• 50 grams Kashmiri whole dried red chillies
• ⅓ cup vegetable oil
• 10 large finely chopped garlic cloves
• 1 finely chopped ginger
• 1 finely chopped medium-sized white onion
• ¾ cup water
• 1.5 tablespoon tomato paste
• 2 tablespoons of white or rice vinegar
• Salt and pepper as per taste
• 2 teaspoons soy sauce

Recipe for Schezwan Sauce 

Remove the seeds from the red chillies and soak them in hot water for about 30 minutes. After 30 minutes, add chillies and 3 to 4 tablespoons of water in a mixer grinder to form a paste. Next, heat some vegetable oil in a skillet, add chopped garlic, and sauté it for two minutes. Then add chopped onion and again sauté it for 2 to 3 minutes. Now, add the chilli paste and cook it for 3 minutes while stirring. 

Cover the skillet for 4 to 5 minutes and allow the oil to ooze out on the sides.

Lastly, add tomato paste, soy sauce, vinegar, salt, and pepper. Cook the sauce for another 1 minute until it thickens. After 1 minute, turn off the heat and remove the pan from the stove. 

Recipe for Veg Schezwan Noodles 

Below is the step-by-step recipe to make Schezwan Noodles at home. 

Step 1: Boiling the Noodles

Take a large boiling pot and add water, salt, and oil to get the water to boiling temperature. After 2 minutes, add noodles of your choice and boil them according to the instructions given on the package. If instructions are not provided, cook them for 3 minutes until they are al dente. After that, drain the water from the noodles and toss it with some oil to prevent sticking and keep them aside. 

Step 2: Preparing the Vegetables and Sauce 

In a large kadhai or wok, heat oil and add garlic and spring onions, sautéing until fragrant. You can add finely chopped red onion before adding other vegetables. Further, add all other vegetables and stir fry them on high flame without overcooking them. Now, add homemade or market-bought Schezwan sauce along with salt and pepper. Saute them for another 1 minute until everything is combined well. 

Step 3: Tossing the Noodles

Once all the vegetables are well coated with the sauce, add boiled noodles to the kadai or wok. Gently toss the noodles with the mixture of vegetables and sauce using a pair of tongs or a spatula. Continue to stir and toss for another 2 minutes on a high flame for consistent heating and cooking. After 2 minutes, turn off the heat. 

Step 4: Serve and Enjoy 

Once the Schezwan noodles are ready, transfer them to a serving bowl and garnish them with chopped spring onions to add colour and freshness. Serve them hot, and you can enjoy them with a company like Chilli Paneer or Manchurian balls.
