Boiled and mashed potatoes - 2 cups
Oil - 1-1 ½ teaspoon
Ginger and garlic paste - 1 teaspoon
Chopped coriander - 1 tablespoon
Chilli powder - ¾ teaspoon
Garam Masala - 1 teaspoon
Chat masala - ½ teaspoon
Salt - to taste

Ingredients for the Sauce and Topping
Finely chopped onion - 1 cup
Dried Mango Mashala - 1-1 ½ teaspoon
Chilli powder - ½ teaspoon
Garam masala - ¼ teaspoon
Water/Curd - ¼ cup
Salt - as needed

Step-by-Step Veg Frankie Recipe

Step 1: Make the Roti
→ Mix both types of flour in a bowl with the oil and salt. Knead a soft dough using as much water as it needs. Once kneaded, brush it with oil and cover it with a wet muslin cloth.
→ Let the dough rest for 10 minutes, then knead it again and divide it into four equal portions.
→ Roll the dough balls in thin rotis. Sprinkle some flour to prevent sticking to the rolling pin or surface.
→ Put a 
tawa on the heat.
→ Cook the rotis lightly on both sides on medium heat and keep them aside. 

Step 2: Cook the Stuffing
→ Boil, peel, and mash the potatoes. You can keep the potatoes for boiling while you are kneading the dough! 
→ Now, heat the oil in a frying pan. Saute the ginger and garlic paste for a while. 
→ Mix in the potatoes. 
→ Put the dry spices like the chilli powder, chat masala, and garam masala. → Don’t forget the salt. Do a taste test and ensure the seasoning is up to your liking. 
→ Once everything is mixed nicely, turn off the heat and sprinkle the coriander. 
→ Allow the stuffing to cool down, then make tiny patties with the stuffing and set them aside. 

Tip: Instead of cooking the stuffing on heat, mix them in a bowl, shape them into patties, and fry them nicely when putting the Frankies together. 

Step 3: Whip up the Sauce and Toppings
→ This step will make a huge difference in the final flavours of the dish. Take a small bowl. Put the chilli powder, garam masala, dry mango powder and salt. → Pour the water or curd and mix well so there is no lump. Coming to the toppings! Mix the chopped onion with the same dry masalas in another small bowl, and the topping is ready. 

Step 4: Put Everything Together
→ Heat the same tawa you used to cook the rotis. 
→ Add butter and lightly toast the rotis. 
→ Next, fry the patties of stuffing on both sides for a few seconds if the stuffing has already been cooked once. It will take a few minutes if not cooked previously. 
→ Place the hot roti on a plate, add two or three patties, sprinkle the onion topping, and drizzle the sauce generously. 
→ Carefully roll the Frankie and wrap it in tissue paper. 
→ Your first veg Frankie roll is ready. Make the remaining three Frankies in the same way. 

Note: If you like it spicier, add chilli sauce, chopped green chillies, or chilli flakes. 
Instead of making the sauce from scratch, you can use any ready-made sauce in your pantry. You can also add some chopped coriander leaves with the toppings.

Some Interesting Frankie Variations to Try

The best part about this dish is that you can experiment with different ingredients and flavours. Here are some suggestions. 

Cheese Frankie: Use the same recipe and grate some cheese, or add a cheese slice on top of the patties and then wrap the Frankie. It will be a hit among kids.
