Sweet Potato Vada Pav

Transform your snack time with Sweet Potato Vada Pav, a fusion of wholesome sweet potatoes, aromatic spices, and creamy paneer. This modern twist on a classic Mumbai street food offers a balance of flavors and textures, making it perfect for indulgent evenings or casual gatherings with a spicy kick that's sure to impress.

INGREDIENTS:

  • 2-3 medium-sized boiled sweet potatoes
  • 4-5 curry leaves
  • 1/2 tbsp turmeric powder
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • Salt, to taste
  • 3-5 cloves of garlic, chopped
  • 2-3 green chilies, chopped
  • 8-10 whole wheat pav, halved
  • 250g paneer, grated
  • 100g makhana
  • 2 tbsp red chili powder
  • Green chutney
  • Roasted green chilies for garnish

METHOD:

  1. Heat oil in a pan. Add curry leaves, cumin seeds, mustard seeds, chopped garlic, turmeric, and green chilies. Cook for 2-3 minutes.

  2. Mix in mashed sweet potatoes. Combine well and remove from heat. Shape into tikkis and air fry until golden brown.

  3. Prepare red chutney by toasting makhana and grinding it with salt and red chili powder.

  4. Mix grated paneer with red chutney in a bowl.


Assembly:

  1. Spread green chutney on one side of a halved pav.

  2. Spread the paneer mixture on the chutney.

  3. Place a sweet potato tikki and roasted green chili on top.

  4. Sprinkle with additional red chutney.

  5. Serve and relish!
