INGREDIENTS:
- 2-3 medium-sized boiled sweet potatoes
- 4-5 curry leaves
- 1/2 tbsp turmeric powder
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- Salt, to taste
- 3-5 cloves of garlic, chopped
- 2-3 green chilies, chopped
- 8-10 whole wheat pav, halved
- 250g paneer, grated
- 100g makhana
- 2 tbsp red chili powder
- Green chutney
- Roasted green chilies for garnish
METHOD:
- Heat oil in a pan. Add curry leaves, cumin seeds, mustard seeds, chopped garlic, turmeric, and green chilies. Cook for 2-3 minutes.
- Mix in mashed sweet potatoes. Combine well and remove from heat. Shape into tikkis and air fry until golden brown.
- Prepare red chutney by toasting makhana and grinding it with salt and red chili powder.
- Mix grated paneer with red chutney in a bowl.
Assembly:
- Spread green chutney on one side of a halved pav.
- Spread the paneer mixture on the chutney.
- Place a sweet potato tikki and roasted green chili on top.
- Sprinkle with additional red chutney.
- Serve and relish!
