Gondh ke Laddu
These laddus not only offer a burst of flavours but also serve as a natural immunity booster, making them a perfect companion for the chilly winter days.
INGREDIENTS
For Frying the Nuts:
1 tbsp Ghee
1/4 cup Almonds (roughly chopped)
1/4 cup Pistachios (roughly chopped)
1/4 cup Cashews (roughly chopped)
1/4 cup Walnuts (roughly chopped)
1/4 cup Black Raisins
1/4 cup Brown Raisins
2 tbsp Pumpkin Seeds
For Laddu:
1 tbsp Ghee
100 gm Gondh (Edible gum)
200 gm Ghee
500 gm Wheat Flour
150 gm Jaggery Powder
30 gm Cardamom Powder
100 gm Dry Ginger Powder
METHOD
1. In a wok, heat 1 tbsp ghee. Add almonds, pistachios, cashews, and walnuts. Cook until golden brown. Add black raisins, brown raisins, and pumpkin seeds. Cool to room temperature.
2. Heat ghee in a wok, add gondh, and cook until they fluff up. Cool to room temperature.
3. Heat 200 gm ghee in a wok. Add wheat flour and cook until golden brown and ghee separates. Cool to room temperature. Grind the fluffed gondh to a fine powder.
4. Transfer the cooled wheat flour to a plate. Add fried nuts, gondh powder, jaggery powder, cardamom powder, and dry ginger powder. Mix well.
5. Shape the mixture into round laddus. Top each laddu with halved almonds.
6. Store the laddus in an airtight container. Enjoy these nutritious laddus as a winter immunity booster.
