Eggs Shakshuka
We think the term 'looks good enough to eat' was definitely coined for this hearty dish of eggs and tomatoes. Make it for brunch or dinner, either way it's a winner!
INGREDIENTS:
15 ml Oil
2 onions, finely chopped
5 cloves garlic, sliced
1 tomato, diced
1 tsp chilli powder
1 tsp salt
1 tsp coriander powder
3 eggs
1 tsp chilli oil
3-4 cherry tomatoes
Olives for topping
Toasted bread on the side
METHOD:
Pour oil in a pan.
Saute onions and garlic until soft and translucent.
Add tomatoes and mix together.
Add salt, chilli powder and coriander powder.
Add eggs to the pan and steam it with the lid on.
Once the eggs are cooked, top the dish with chilli oil, cherry tomatoes and olives.
Serve with toasted bread.
