Recipe 1: Plain Aloo Tikki Recipe

Follow this step-by-step instruction, and you will have the most delicious plate of aloo tikki whenever you want! You will need around 10 minutes to prep and 20 minutes to cook. Let’s get cooking!

  • Boil the potatoes.
  • Chop all the ginger, chillies and cilantro.
  • Once the potatoes are boiled, let it cool for a while.
  • Then, take a mixing bowl. Grate or mash the boiled potato.
  • Add all the dry spices like cumin, garam masala, chat masala, amchur powder, etc. Don’t forget the ginger, coriander leaves, and chillies.
  • Mix everything well.
  • Now, add the bread crumbs and rice flour or cornstarch. Add little by little and keep mixing. The mixture should not be too tight.
  • Divide the mixture into around eight tikkis and start shaping them like patties. Apply oil to your hand so the mixture doesn’t stick to your palm.
  • Heat some oil in a frying pan. Place the patties carefully in the hot oil and fry on both sides. You would want a nice golden brown colour.
  • You can also use an air fryer or oven
  • If using an oven, place the patties in the baking tray. Spray or brush some oil and bake the patties at 180°C / 190°C for 12 to 15 minutes.
  • Once golden brown, serve hot!

Recipe 2: Stuffed Aloo Tikki Recipe

This recipe is similar to the previous one. One extra step is making the stuffing. Here’s how you can make these stuffed tikkis!

  • Prepare the potato and spice mixture as you previously did. Divide the potato mixture into small patties.
  • For stuffing, slightly boil the green peas and strain the water. You can put it on for boiling at the same time as the potatoes.
  • Mash the peas but not as finely as the potatoes. Keep the texture coarse.
  • Add all the stuffing ingredients, including the dry spices and herbs.
  • Give it a quick mix, and your stuffing is ready.
  • Stuff the peas mixture into each of the potato patties. Shape nicely, and then start frying!

Some Tips!

Ready to make your aloo tikki? Here are some final tips for your any-time cravings!

  • New potatoes may not have the starchy texture you need for the tikkis. Use old ones.
  • If you are making stuffed tikkies, make sure to adjust the chillies. If the stuffing and potato patties contain a lot of chillies, it may ruin some appetites.
  • You can use sweet corn, onion, paneer or other ingredients in the stuffing.
  • Do not skip the binding agents like the bread crumbs or the rice flour. Otherwise, the shape of the patties will not hold.
  • If you can, keep the shaped patties for 30 minutes in the freezer before frying. This way, the patties will hold their shape nicely while frying.
  • If you want your tikkis super crispy, double-fry them. Fry till light yellow and then fry again till golden brown.
  • The tikkis will taste delicious with Tamarind (Imli) and Corriander chutneys. But you can also pair it up with some chole.
  • You can use this aloo tikki in burgers and Frankie's.

Conclusion

We know you can’t wait to try this tikki recipe at home. So, gather all the ingredients and begin cooking. When you are making the patties, make some extra. You can keep them in your freezer for 2 to 3 days and have them as evening snacks for the next few days. Here’s how you do that! Bring them out of the freezer, let it defrost for a few minutes, fry and enjoy.
