Wholesome Comfort: One-Pot Winter Recipes for Family Dinners

We love to cook all year round, but there's something extra special about creating hearty meals during the wintertime. Though dining in your favourite restaurant may feel great, nothing brings the whole crew together like a cosy family dinner. From tried-and-true family meals, like the good ol' Biryani, to everyone's favourite Korma, you'll find recipes in our blog that fulfil your dinner dreams and please your family too. We’ve brought four delicious and easy-to-prep dinner dishes to bring winter warmth to the dinner table.

Creamy Mushroom and Spinach Risotto

Ingredients:

• 1 cup rice
• 1 cup mushrooms, sliced
• 2 cups fresh spinach, chopped
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 4 cups vegetable broth
• 1/2 cup Parmesan cheese, grated
• Salt and pepper to taste
• 2 tablespoons olive oil

Instructions:

In a large non-stick fry pan, sauté onions and garlic in olive oil until softened.
→ Add mushrooms and cook until they release their moisture.
→ Stir in rice, spinach, and vegetable broth.
→ Simmer, stirring occasionally, until the rice is cooked and the mixture is creamy.
→ Stir in Parmesan cheese, season with salt and pepper, and serve.

Quick Vegetable Biryani

Ingredients:

• 1 cup basmati rice
• 1 cup mixed vegetables
• 1 onion, sliced
• 1 tomato, chopped
• 1/2 cup yogurt
• 2 tablespoons ghee
• 1 teaspoon biryani masala
• 1 teaspoon ginger-garlic paste
• 1 teaspoon cumin seeds
• Whole spices (cinnamon, cardamom, cloves, peppercorns, bay leaf)
• Salt to taste
• 2 cups water

Instructions:

Heat ghee in a casserole on medium heat.
→ Add cumin seeds, whole spices, and sliced onions. Sauté until golden.
→ Stir in ginger-garlic paste, and mixed vegetables, and cook for 3-4 minutes.
→ Add chopped tomatoes, biryani masala, and salt. Cook until tomatoes are soft.
→ Add soaked rice, pour in yoghurt, and mix well.
→ Pour water, bring to a boil, then simmer on low, covered, for 15-20 minutes until rice is cooked.
→ Fluff the rice, garnish with fried onions (optional), and serve hot.

Sweet Potato and Chickpea Stew

Ingredients:

• 2 sweet potatoes, peeled and diced
• 1 can (425gm) chickpeas, drained and rinsed
• 2 cups spinach leaves
• 1 red bell pepper, diced
• 1 onion, chopped
• 3 cloves garlic, minced
• 4 cups vegetable broth
• 1 teaspoon cumin
• 1 teaspoon paprika
• 1/2 teaspoon cinnamon
• 2 tablespoons olive oil
• Salt and pepper to taste

Instructions:

Sauté chopped onions and minced garlic in 2 tablespoons of olive oil until translucent.
→ Add diced sweet potatoes and red bell pepper, cooking until slightly tender.
→ Stir in drained chickpeas, vegetable broth, cumin, paprika, and cinnamon.
→ Let the stew simmer until the sweet potatoes are fully cooked.
→ Add spinach and cook until wilted.
→ Adjust seasonings with salt and pepper.
→ Serve hot and enjoy your comforting Sweet Potato and Chickpea Stew!

Vegetable Korma

Ingredients:

• 2 cups mixed vegetables (carrots, peas, potatoes, cauliflower), diced
• 1 onion, finely chopped
• 1/4 cup cashews, soaked
• 1 cup coconut milk
• 1/2 cup yogurt
• 1 tablespoon ginger-garlic paste
• 1 teaspoon garam masala
• 1/2 teaspoon turmeric
• 1 teaspoon cumin powder
• 1 teaspoon coriander powder
• 2 bay leaves
• 3 tablespoons ghee or oil
• 1 cup water
• Fresh coriander leaves for garnish

Instructions:

In a kadhai, sauté chopped onions in 3 tablespoons of ghee or oil until golden brown.
→ Add ginger-garlic paste and sauté until fragrant.
→ Stir in mixed vegetables and cook for a few minutes.
→ Add soaked cashews, coconut milk, yoghurt, and 1 cup of water.
→ Season with garam masala, turmeric, cumin powder, and coriander powder.
→ Add bay leaves.
→ Simmer until the vegetables are tender and the korma thickens.
→ Garnish with fresh coriander leaves before serving.
