Greek Yogurt Dressing with Farmhouse Salad

This is a very versatile dressing that can be used to quickly dress up a salad and also as a marinade. It is also as basic as it gets. You could add cream cheese to make it thicker, or increase the single cream. Else skip the cream completely for a leaner version.

DRESSING INGREDIENTS: Serves 2

 

200 ml Greek yogurt

¼ cup extra virgin olive oil

¼ cup single cream

1 tsp mustard paste

2 cloves garlic, minced

Zest of 1 lime

Juice of 1 lime

¼ cup fresh coriander

Salt and pepper, to taste

 

Note:

Can be made ahead of time and stored in the fridge as it won’t spoil easily.


METHOD:


• Place 50 ml yogurt and all the remaining ingredients in the Nutrifresh bullet jar. Process until smooth.

 

• Whisk in remaining yogurt.

 

• Taste and adjust seasoning.

 

• Substitute for the mustard paste – grind some yellow mustard in the small grinder jar and use 2 tsp.
