Add the cubed potatoes and a splash of water. Cover and cook until the potatoes are tender.
Add the washed spinach leaves and cook until they wilt.
Sprinkle garam masala over the curry and mix well.
Garnish with fresh cilantro leaves and serve with rice or flatbread.


Potato and Mushroom Stir-Fry

3 medium potatoes, peeled and thinly sliced
2 cups mushrooms, sliced
1 onion, thinly sliced
3 cloves garlic, minced
2 tbsp soy sauce

2 cups basmati rice, soaked and drained
4-5 medium potatoes, peeled and cubed

4 cups water
