INGREDIENTS -
- 500g cherry tomatoes, halved
- 7-10 garlic cloves, minced
- Fresh parsley, chopped
- 1 ball burrata cheese
- 1 pack spaghetti
- Salt and pepper, to taste
- Grated Parmesan cheese (optional)
METHOD -
- Prep Ingredients: Chop the garlic and parsley, and halve the cherry tomatoes.
- Cook Tomatoes and Garlic: In a saucepan, heat 2 tbsp olive oil over medium heat. Add cherry tomatoes and minced garlic.
- Cook, stirring occasionally, for 5-7 minutes until the tomatoes release their juices and the garlic is toasted.
- Blend the Sauce: Transfer the roasted tomatoes and garlic to a blender. Add the burrata cheese and blend until smooth.
- Cook the Spaghetti: Boil the spaghetti in salted water until al dente. Reserve some pasta water for later use.
- Combine Sauce and Pasta: In the same saucepan, add the blended sauce.
- Add the cooked spaghetti and toss to coat, adding reserved pasta water as needed for the desired sauce consistency.
- Season and Serve: Stir in the chopped parsley. Season with salt and pepper. Serve with grated Parmesan cheese, if desired.
